When a butcher has some really good product and gets creative, magic happens. That's how this Boneless Saddle Chop was born.
The best way to describe this lamb cut is: "pure deliciousness". This is an extremely rare cut of VERY high quality lamb.
It has a portion of the loin and tenderloin together, with meat and fat from the flank and the belly. You can pan sear it, grill it or roast it... it will be delicious.
It comes from one of the most exclusive Lamb programs in the country. It was raised on J12 Ranch and Livestock, in Park City, Utah. This is a multi-generational farm run by Chad and Linda Osguthorpe.
This lamb is as high quality as it gets. super marbled and and presents extremely delicate flavor.

Boneless Barnsley Lamb chop
These chops couldn’t have been better! The even thickness allowed for perfect uniform grilling on my Big Joe Grill with Fogo premium charcoal! Just kosher salt, grill, and feast! I just added baked then roasted potatoes with onions and peppers! You cannot mess this up!

Amazing!

Exceptional!
Following a carnivore diet I look for fatty cuts of meat and this lamb is exceptional! Great flavor, perfect fat/protein ratio, tender and an absolute treat! We like our meats rare in our household...sous vide for 2hrs at 125F and seared with the flame thrower for a perfect quick crust. Will definitely be buying more of these in the future.
